When making bread its best to stir the flower mixture verry well so that the gluten forms a nice elastic dough. When baking a cake its best to stir lightly and as little as possible as to avoid the gluten which occures naturaly in mixed flour.
My question is: Is it better to mix your flour in the PF tek well and create gluten or is it best to be gentle and carefull not to create gluten?
