Have you seen the bigger version at mycotopia? HERE. There's a PDF with pics and directions included.
If I were you I would add a SUPER useful tool (IMO): when I make bulk pasteurizer out of a 55 gallon drum I am going to use a Ranco ETC-111000 Thermostat. The Ranco will turn off the steamer once the core bulk temp is at a preset temp, say 150F. And if the temp drops below the set point the Ranco will turn on the steamer...that way you don't have too watch the pasteurization, it's automatic!!!

Here's what I was talking about while referring to the probe in jar thing. Excess humidity can and will damage the probe, so do put it in a sealed jar. A little humidity won't kill you.

I did read that one before I made the unit. The unit maintains the temp well and really does not need the thermostat, it was an added cost and IMO was not needed for this design.
