this dish is a simple crawfish pasta that was developed by a woman named monica at Kajun Kettle Foods here in NO. It is served at the New Orleans Jazz and Heritage Festival and is one of the most popular food choices they have. and trust me, there are alot of good competitors!
Cortezthekiller and I made this tonight with at my father's house.

Crawfish Monica is super easy, and totally delicious. If you can't get crawfish where you live, it sucks to be you. You can also use shrimp or crabmeat though, and it is still :
What you need:
- 2 lbs. Pasta (any kind will do, but fusilli/rotini/spirli is the best, penne or bowtie will also work though)
- 2 lbs FRESH Louisiana peeled crawfish tails. (Chinese crawfish are a sacrilege and if you them, please do not tell me.)
- One bunch (or about 1 - 1 1/2 cups) of fresh Italian parsley
- About a quart of heavy whipping cream
- 2 sticks un-salted butter (not margarine, please)
- 8-10 green onions (or about 1 1/2 cups chopped)
- Fresh grated Parmigiano-Reggiano cheese (to taste, I like about a cup)
- 5 or 6 twigs fresh thyme
- About 1/2 cup garlic
- Creole/cajun seasoning (aka Tony Chacherie's), Salt, Pepper (to taste)
 
Slowly melt the butter over low heat. Add chopped garlic and heat until garlic "opens up" then add about 1/2 the parsley and green onions, and about 3/4 of the quart of cream. Add Creole Seasoning, salt and pepper. Stir constantly (and briskly) until cream sauce comes to a steady boil and thickens a little.

Stir in crawfish and thyme. Crawfish do not need a lot of time at all to cook, so basically just get the heat back to boiling, then continue...
  
Add ABOUT 3/4 of the cooked (al-dente) pasta (add it slowly, give or take if its getting too dry or wet), and almost all remaining parsley and green onions (I like to keep a little on the side to top it off at the end)
  
Add the cheese, and let it cook over low heat with the pasta for a few minutes to let all the flavors meld together. You may want to add some more salt and pepper to taste at this point.

Serve with garlic bread or french bread! YUMMO!

Yeah and I forgot to mention, you will probably only need about 1 1/2 pounds of pasta. But if you wanted to use the whole 2 pounds, I suppose you could use the rest of the cream.
Maybe I should edit it.

do yourself a favor
avoid chinese seafood. i know its hard in the rest of the country, but if you can get some sort of FRESH shellfish, try and use that.

quite an interesting recipe! i just recently had crayfish risotto pretty much all of the said ingredients minus the pasta 
you are SOOOOOO LUCKY to be able to use 2lbs of crayfish!!!
if you don't have a crayfish license for the lakes here...then each crayfish costs 19 euros at the market! then of course there's the nono alternative of the chinese frozen crayfish which costs 15 euros for 20.
but, there is a considerable difference in taste from the chinese and home caught crayfish. can't wait for crayfish season in a month!

i'd never pay more than 5.00/lb or so for peeled tails, gulf fresh.
huge difference in fresh and frozen seafood for one. but, LA has the worlds best crawdad, trust me.

also: home caught is pretty win too.
freezing is the worst thing that can happen to otherwise good seafood outside of waste. so, remember this. flash freezing, even worse.

fresh quality crawfish is actually really hard to get to use northerners, unfortunately.

Like I said, this recipe is also very good with crabmeat (not imitation), fresh shrimp, or if you can't get seafood, it's also good with chicken. But search around, I think frozen crawfish tails suck, but if you can't get anything else, it's still a good dish. Hell, I'm pretty sure a lot of restaurants around here even use the frozen ones.

oh just for tails?
i'm talking about a whole crayfish for 15e each...fresh...as in, alive.
traditionally in the country that i'm currently living in...whole crayfishes are cooked in a large pot of water, with crown dill, salt and sugar. then you eat it with toasted bread (smother the stomach matter on the toast) and drink it with schnapps/vodka. and u say skål :P

I'm a sucker for almost any seafood dish in a white sauce. My hometown is about an hour from New Orleans so I grew up on stuff like that.
