What are the mushrooms they sell in grocery stores

Okay, I know there are portabella's, and all kinds, but the ones I usually eat have NO NAME on them.

I was wondering if I could cultivate them, the package only says AMERICAN MUSHROOMS I believe.

Anyone know what kind they are? I just checked the package (just got back from Publix) and there is no name what so ever!

Generally, but not always, agaricus brunnescens. AKA: the white button mushroom.

Were you thinking of trying to cultivate them? If so, there's easier to grow edibles that are more fun and taste better :smile:

I thought the common white/brown button mushroom was Agaricus bisporus. I guess I will go re-educate myself.

I have re-educated myself a bit. I found that both names are synonymous. I wonder what the story is behind this binomer.

Yup, they're the same thing. It can happen that the same biological is "discovered" independantly by two researchers and thought to be unique -- and then later on genetically similar enough to another to get "merged".

You also get the reverse.....something that gets lumped into one family as then assumes its common name, only later on to be found genentically different and then put into a family of their own.

Incidentally, what's sold as the common-or-garden white mushroom isn't always agaricus bisporus or a. brunnescens...there's at least one other strain that you might come across, but it's latin name escapes me.

Much like the variation in P. cubensis, the white button mushroom is also A. bisporus (brunescence, for all you Stamets lovers), but a different variety. I wonder if crimini varities will pigment up even in the absense of light?

FreezingPenguin: let me clarify a few things:

(1) agaricus brunnescens and agaricus bisporus are exactly the same strain....with, unfortunately, two latin names attached.

(2) This strain comes in both a pigmented and an albino form. AKA: "white buttons" and "brown buttons".

(3) "but agaricus brunnescens, or crimini mushroom, is not white, its more or a brown.......resembling a small portabella, because in fact that's what it is." To be pedantic, a portabella (a marketing term) is actually an overly mature brown pigmented a. brunneescens/a. bisporus. An, FYI, you can grow out the albino version in exactly the same way.

I found my first Panaeolus there (Brasov). They were growing from a dog shit. :crazy:

They're the same species. Commercial names are usually applied to strains (or races?). Like you said there are white and brown strains in the same species.

I think that Agaricus campester is also grown commercialy. Different species - very similar look.

I do believe agaricus campestre is what I might have seen sold in France....slightly more developed cap....
