black beans and rice

This is a good recipe: black beans
-boil for 2 minutes
-turn off heat
-let soak for 1-24 hrs (I have let them soak overnight with no waterlogging but the recipe on the bag of beans says only do it for 1 hour)
-smash and chop some raw garlic (5-10 cloves)
-cut up an onion
-throw it in the beans and bring to a boil
-lower heat to simmer for 1-3 hours
-add more water if necessary while cooking
-you can throw in some salt and pepper and herbs
-you should put a few drops of liquid smoke in.
-simmer until your whole house smells delicious.
Cook some jasmine rice.
and you're good to go.

i prefer red beans and rice, with some sausage mixed in. Thats goooood shit!

Yeah. I havn't made red beans and rice in a long time. It's a little more involved. You should smash the beans through a strainer spoon toward the end of cooking (last hour) to make the consistency thick and delicious. At least that's what I was taught.

Sounds good!

I'd probably substitute smoked ham or hock or picnic instead of the liquid smoke. Unless it's a vegetarian dish. Sounds very much how I cook blackeyed peas except I use no rice, just eat it as a regular bean soup. What spices do you use exactly? I'm thinking some basil, salt/pepper, red pepper and at least one large whole jalepeno or a few serranos. I'm a spice/pepper freak when cooking. Black-eyed peas or navy bean soup I like served with liberal amounts of apple cider vinegar in the bowl. By 'liberal' I mean alot of the stuff.

I'm wit 'cha on da spices Doc.  I have cayenne pepper and I have a nice basil plant in my kitchen window.  I forgot about fresh peppers.  I'm a pepper novice (as with everything).  I usually stick with the jalapenos :shocked:.  I've used banana peppers (whoa  --a bit much I think).  Serranos are the smallish red or green thin ones right? Those are excellent.  I have died red "Japenese peppers" --they're good for a lot of recipes too.  Apple cider vinegar?  That's interesting.  I sometimes have a little shot of that.  Yow!!

Serranos kinda basically look like a jalepeno, but are usually longer and more slender but are generally hotter, and I think are a rival for taste too!

As for the vinegar, I love vinegar in bean soup and on french fries and went on an apple cider vinegar kick for awhile doing a shot or two every morning. cuz I heard it was good for you (and it is too) but didn't really feel any healthier or anything. But the upside is I can do shots of vinegar really easy. Some people think its weird but .... oh well.
