wild carrots-queen annes lace

inspired by the massive Ramp(wild leek)cookoff we had a few nights ago, my roommate and i decided to head out around local parks and woodlands to see what other kind of food we could pull out of the ground. we ran accross common foods like chives and dandelions at nearly every turn. (infact its likely i will never buy chives again, and i've never bothereed to pay for dandelion greens). we also found an abundance of rhubarb.
my roommate then points out to me, several patches of fronds looking somewhat like chervil. i had no idea what it waas but he says;"i think those are wild carrots". so we dug around one, and sure enough, out comes this 2 or 3 inch white root.
we then continued on, only to find patch after patch of these things.
so i probably have about three pounds of actual carrot, some are very small, and a pound or two of their greens.
i'm not sure what to do with them, aside from using them in place of regular carrots. they are very arromatic, and have a clean, slightly sweet taste. the large ones are a little woody.
anyone have any creative ideas?

wow, great idea. the thought hadn't really crossed my mind but pickling them sounds good.

Are they really sweet? Possibly not carrots and wild parsnips instead? Anyway, you can make a soup or even just a puree base and freeze that for quite a while. Pickling is a good idea too. And if you do fry them, and the sugar content is high, they will probably burn too much unless you give them a rinse before.

no, definately not parsnips. the flavor is very carrot. that said the texture is more like a parsnip, and i will have to treat them as such. they are extremely woody/fibrous in texture and i think my only decent option is to boil and mash or puree them as i would with a parsnip.
i was gonna pickle them, as suggested but i don't think it will be palatable.
i also read that the greens of wild carrots are not good on the stomach.
