The set up looks great! Hadn't seen ya post in a while. Guess I know what you've been up to. You have a flow hood in that set up?

Yeah thats an electric sterilizer, pressure cooker. I call'em Plug-N-Play. B-E-A-utiful though man. Cant wait til I buy my next house better believe I will try to one up that =0 ...!

No flow hood, I have a hepa filter I'm going to stick in there, just need to order a new filter for it. Won't be a true clean room, but, clean(er).
Flow hood is on my list of things to do though.

I did the same treatment to my garage, I had a pile of junk 6 feet high and 40 feet long, not including 20+ big black trashbags stuffed full. Mostly just old shiat left by past generations of family who lived here before me (and yes, I did double check with them if they actually wanted any of it).
Now man, being able to prep my jars, buckets, tubs, grains then sterilize them all in one room is so convenient.
The 75x holds 10 widemouth quart jars standing up and then 5 stacked sideways on top and still has enough room to breath.
Each cycle takes about 2 1/2 -3 hours. Bout an hour to get it up to sterilization level psi (30 min preheat, 15 mins to heat up, 5 mins to 'air out', 10 mins to get up to 15-21 psi level) 90 minutes to cook.
Once it's done you just flip open the steam valve and it takes about 5 minutes to depressurize. Now i've read somewhere that you should let it cool naturally, but the manual says to do it that way and after 2 test runs there wasn't any cracked glass or anything.
So figure in a 10 hour day I could sterilize up to 60 quart jars. Next up I want to learn to use spawn bags and some other neat stuff.

You should also put a dishwasher in there to clean your jars. They're pretty easy to find used for like $50 on craigslist.
You've already got the water lines available. Your jars would never even have to leave the room. Pimpin.

My kitchen doesn't even have a dish washer atm. It's next on my list of things to do. One upstairs and one down in the workshop.
As of now, I use a big sink and a big scrub brush.

Nice Spongiform, looks good. Lots of jars though, have you got into using filter patch bags yet?

So I got this baby broken in over the weekend. It works like a charm. Once you get used the controls it's pretty easy and consistent to work with.
Got 72 quarts sterilized and inoculated. Took me less time then my old PC would have taken to do 10 quarts.
24 quarts of haiwain, 18 quarts of pesa, 12 quarts texas, 12 quarts mazatec and 6 quarts eq. I need to finish modifying lids and pick up a couple more cases of jars so I can use the rest of my strains, but it's a start.
If anybody was wondering - yes the 75x is worth it, if you can afford it then get one :-D
