Tray of poo question

I have a tray of pasteurized dung which I spawned with 3 cakes. I mixed the cakes with the dung and then put a thin layer of dung on top. Today is day three of the tray's colonization and so I took a little sneak peak. Bits of mycelium had surfaced spaced apart but fairly evenly around the entire surface. How should I proceed? a)initiate pinning when dung surface is fully colonized b) avoid overlay by pinning when dung is close but not quite fully colonized c) allow dung to colonize 100% and then case.

These are the options I'm considering, if there are any more then please let me know. This is my first non-cake tek, although I have some 50/50 casings going simultaneously. Thanks in advance.
