How did you open them to air?

Edit- I mean, it just was that the foil was covering the holes? Or worse than that?

If it's just the foil, you're probably ok.

it was just foil but i was so paranoid about contams that i used a rubberband around the top to help seal it, now i took tin foil off and flipped the jars with an air gap under them

Just leave them flipped till their done to limit possiblitly of contams

I would only suggest flipping them if only the bottom was uncolinized, by flipping them you are only allowing air to the bottom and you still have a GE problem because your holes are still not breathing if everything is sitting on them.
