Is condensation in the PF jars a concern?

Slowly but surely my jars have collected some condensation on the sides of the jars - is this a concern, or just to be expected given the temperature of the incubation room, about 85, and nothing to be concerned about?

Condensation could be a concern. If you reached about 80% of colonization, you should consider about untaping and fliping the jars. That way you'll be giving some more air exchange and reducing condensation. My two cents.

Cool, thanks for the info - does untaping inevitabely increase the possibility of contamination? Just a judgement call, I guess. Should I be flipping them as standard practice?

A little bit of condensation is a sign that your cakes are nice and moist. Large puddles on the side is a sign they are flooded.

They're probably just right, then. No water on the bottom, just some condensation on the sides, nothing overwhelming.

Hardly, that is if you incubate your jars in a clean and draft free place.

Yeah, it's certainly clean and draft free, so I'll add that my growing body of knowledge....what a diffference a few weeks makes (I knew nothing about growing before I started about a month ago....birthday this week).
