market for wild edibles?

hi, all, anyone with experience selling wild edibles to local restaurants in regards to pricing? morels, boletes, chantarelles, chicken and hen of the woods, black trumpets, caulifllower, etc by the lb. also any market for rock tripe and seaweeds? thanks a bunch for any feedback, the internet abounds with offers for dried shitakes, etc., but not much help relating to trade at a local level. thanks again

While i don't have a any experience yet selling to restaurants. I have worked in kitchens for the last 13 years. All those species should go for $15-30 a lb depending on availability and the quality. Look for restaurants that like to utilize foods from local farms, in my area this is taking off. My state has a lot of requirements for selling collected mushrooms and many require insurance, most restaurants are required to buy from licensed dealers. Still many restaurants will do back door deals if its a good product. You'll probably have better luck with that going to smaller restaurants as opposed to corporate places.

I don't like commercial exploitation of wild edibles, simply because it leads to "overfishing" of these varieties. I've seen certain species completely disappear during the 80's. If you feel like you must do it, do it responsibly, or you won't be doing it at all in the future.

I had half a paper bag filled with black trumpets that got me a dinner for two at the best restaurant in our area.
I sold oysters for 6 a pound and Maitake for ten a pound. They would also spend about 100 dollars on a mixed 5 pound box of mild mushrooms.

hi, Kahuna, I understand your sentiment and agree. I find myself amongst the unfortunate masses of unemployed currently, I have the time (for now) and love the thrill of the hunt, being outdoors. I feel a bit of guilt doing this, but in some ways my hand is being forced. That being said, I generally leave 1/4 of what I find by habit, and wouldn't do differently now despite circumstances. Does this sound like a reasonable amount, enough for most species to carry on?

me niether, that's why I only do it when I'm really hard up for cash, and never more than $50 worth so in total about $80 worth in 8 years, but I see people all the time with huge hauls making like $500 + it sucks cuz then I cant go out and pick a few for diner

just to note racking in a few g's on sales of edibles i make much care in preserving and spreading the mushies, carefully paying attention to the numbers, witch in all my patches are at a incline. sometimes its leaving some behind and making sure to spread spores correctly.

what are people thoughts on how much to leave/how to propogate? I generally leave 1/4 of what I find and have heard that the act of picking is enough method to shake free sufficient spores.

I have absolutely no problem with you folks doing it, I am just trying to appeal to people's conscience to treat the delicate balance of nature with respect. I am not worried about most people here, though, because I am sure you love mushrooms as much as I do.

I have no experience hunting at all, but I thought that as long as you don't dig up the soil or anything, the mycelium will live and fruit again next time it rains.
And also, I thought that the fruitbodies would just rot and die if no one were to pick them (but I guess, they wouldn't sporulate then...)

I absolutely love mushrooms! I love looking at them close, from afar, eating them, pondering a mean hen o the woods marsala, considering dabbling in the dark art of mushroom haiku. Hoorah for the spring and all the good things that lie in wait

I've seen it happen, bro. More than once. Boletus edulis disappeared from the woods around where I live when we had an influx of Russian-German immigrants back in the 80's. They roamed the woods with friggin suitcases. Ignorant kiddie trippers made scorched earth out of some of my favorite Psilocybe semilanceata hunting grounds when word of mouth had made the rounds in the early nineties. Fortunately, the B. edulis population has recovered since then, but many delicious edibles are still considered to be endangered species. I love eating them, too, but what are we going to eat ten years from now if we catch all the fish, kill all the deer and gobble up all the good mushrooms? That's right, Monsanto all the way.

yikes, I hear you, and I will do my part not to abuse the knowledge. I contacted my local farmers market yesterday and the gentleman was rather excited to hear that I might be bringing wild ones this summer. The last time he saw them was when an old farmer used to bring in some sort of shelf polypores to market way back when, which leads me to believe that there is a general lack of interest in actually going out and finding them. I won't let this community down, and I promise to post pics when the time is ripe
