Pasturization Technique

For months I have watched and read all the information that you guys have put up here. Thank you, without your help, my sucesses wouldn't have been possible. I do have some questions now:

1. I wish to try 50/50+ casing method but don't have a pressure cooker. What is the most effective way to pasteurize the casing?

2. How much on the average (in grams) would the Puerto Rican strand yield if cased in this manner? (assume optimal growing conditions)

3. When I have used the PF Tek method humidified by damp perlite, the mushrooms have a tendancy to grow from the bottom of the cakes instead of the sides and tops where the micelium is firmly established (at least this is true for my 1st flush). I have the cakes suspended 2 inches above perlite by means of chicken wire. Why is this and how can I get the cakes to fruit from the sides and top?

1. Pressure cookers are used more for sterilization, not pasteurization. The best way to pasteurize is using a candy thermometer in a pot keeping the temp of the water at about 175 degrees. Note this is well below boiling.

2. This would depend on the amount of original substrate.

3. This is because the moisture is hitting the bottoms more. Place the cakes on a piece of foil or plastic lid. This should help.

Ummm o.k., so I keep the water temp at around 175 deg. What do I do with the mixed substrate? Do I put it in a pillowcase or something and put it in the water?

You'll want something to weigh down your pillow to totally submerge it. I use a piece of broken up cynderblock.
