Is this ready for fruiting? (photo of coir / coffee monotub)

My cats gran started incubating a monotub (coir / coffee) about 14 days ago.. it still doesn't seem 100% colonised.
There are still bits of visible substrate (look at top left corner of tub in pic for most obvious example), and you can see bits of grain spawn etc on the surface (she put a 'frosting' layer of spawn on top of the substrate)...
Basically it's not one big white block of mycelium which she is led to believe it should be before fruiting..
It is also very wet - you can see all the water droplets on the surface in the pic...
Soo... is it too wet? is it ready for fruiting? is it in trouble?
ps: I wasn't planning on using a casing layer

Should I attempt to dry the substrate out, or just stick in fruiting chamber with light?

Another question - if I want to check whether the substrate has been colonised throughout, can I open the tub & actually pull it apart (with a sterlised fork for example) to check, or is that asking for trouble?

How big is the tub? What was your spawn:sub ratio? How long has it been colonizing?
Without that information, it still looks like it needs a few more days then casing or no casing, it should be fruited.
PS Water on surface is fine.

Leave it be. You opening the lid to inspect it will only stall it more by introducing FAE prior to 100%. And even once you hit 100%, you should wait a few days prior to introducing to fruiting conditions.
How have you been letting it colonize?
Did you wrap it up in a bag?
When colonizing mono's I like to tape up the holes, you'll still get gas exchange through the imperfect seal of the lid. Then a few days after 100%, open up the holes completely (since you'll usually have an abundance of condensation + humidity) to allow the substrate surface to dry out slightly, and then shove polyfil into the holes as needed.

In answer to the questions:
- How big is the tub? - 80 litres
- What was your spawn:sub ratio? - 6 pints rye grain spawn to roughly 8-10 litres substrate (1/2 brick coir, 1 pint coffee grounds, 1 pint verm, 2.5 litres water (half the amounts used in the following link because my pressure cooker isn't big enough to handle those volumes - http://www.shroomery.org/forums/showflat.php?Cat=0&Number=9289857&page=0&vc=1&PHPSESSID=#Post9289857))
- How long has it been colonizing? - Over 2 weeks
- Did you wrap it up in a bag? - No - once i spawned to monotub with polyfill filled holes, I closed the lid & left it... though recently i have put the monotub into the incubator i used for the spawn jars (placcy box sitting in water with aquarium heater set to 27 degrees) as i thought it might be too cold...

Well that is likely your problem right there. With monos, some people will spawn their mix, then put polyfil in the holes, and then wrap the entire thing up in a plastic trash bag and seal it. There will be enough air in that bag to get it through the spawn run. I don't like this though...
Next time use the method I described above by taping the holes up and adjusting your polyfil as needed. You got too much Fresh Air Exchange during your spawn run and is likely what has been stalling it out. During colonization you only need Gas Exchange. The good thing about this too is you can still peak at the progress without opening the lid or anything.
Second, you don't need an incubator for your jars. Let the jars colonize at normal room temperature on an open shelf, they don't have to be in the dark(light doesn't really matter during colonization in jars or while on the bulk spawn run)
Since your spawn and your mono need to both be at normal room temperature, use a small space heater to make sure the room they're sitting it is right. You can likely pick up a small space heater with an thermostat for 20-30 if you shop around for it.

I'm with shroomzey. you should tape those holes up. cover it with a blanket or something and let it sit a while longer. i dont think you had enough co2 built up for full colonization. but then again you have those like fahtster who layer their tubs and stick into fruiting conditions right away with great results.. but he uses an extra layer of sub on top, not a frosting layer. with exposed grain like that i would cover holes with duct tape and let incubate a while longer.
mine looked like this when i put into fruiting conditions.
