Are you sure it's not a bluish-green bruising from where you handled the cakes when you dunked them? If you handle them without the greatest of care, your fingers will leave little bluish-green marks common of psilocybe strains.

It might just be bruising, mycelium will bruise just like the shroomz do, or if your cakes werent fully colonized it could be contams, do they smell funny?

Bruising can be bad if it gets out of control. A little bit from handling them is just fine though. Just take great care when handling them.
Bruising is caused by the oxidization of phenolic compounds inside the mushroom or mycelium. You expose air to certain chemicals and they turn bluish.
