Cold Shocking

Jacques Chirac wants to cold shock his cake.
The cake is fully colonized.
Does he have to wait for pining to cold shock it? Or does he have to cold shock to induce pinig? If so, is there a right time?
He read in older posts that dunk cold shocking is better, do you confirm? He'd prefere not to dunk it befor the 1st flush, (just the way he feels). He's so cool.

Dunking and cold shocking are for different reasons.
Dunking rehydrates a cake so that it can more flushes. It is not required for the first flush but can provide a bigger first flush.
Cold shocking is used to initiate pinning (i.e stop vegative growth and bring on the fleshy bits) There in no point in cold shocking if your cakes already pinning.

OK, thanx. That's clearer. Now let's try to focuse the question. When can he exactly cold shock the cake? It's fully colonized, is it OK, or shall he wait for a kind of other sign?

If its fully colonised, yes then shock it now. HOWEVER why are you trying to cold shock a cake (it should'nt be required UNLESS you live somewhere where it hard to get a dif in temp between incubation and fruiting chamber of between 5f and 10f)
I'm in Mr helpfull mode tonight (coz my Pans Cyans are colonising happily )

He was wondering, he wanted informations in order to know if cold shocking is better, required, optionnal, or else.

Cold shocking is a tek used to induce pinning if your having trouble and can't get it to pin in the fruiting chamber. Both cold shocking and dunking are way overused and mostly not necessary in my opinion.

I agree with you, but if cold shocking and dunking don't hurt (if done correctly), and they can help, why not do it?

Oh I'm not saying they can't be beneficial, but if you prepare and sterilize your substrate properly, and have your fruiting chamber set up properly, than they both basically become a waste of time and and unecessary step.

It might be a waste of time, but i always cold shock...what can it really hurt, some strains r rediculous when it comes to trying to get them to pin...i'd say just throw them in the fridge for 6 to 12 hours....itz not a waste of time i don't think, and 9 times out of 10 will induce pinning within the next few days...just my 2 cents

Personaly, coldshockings a simple and non risky thing to do, so it doesnt hurt doing it. I do it everytime regardless of the strain......If I had like 200 jars, yes it would be a waste of time and id think twice about it. But not with 12 jars or something

I'm not saying it can hurt anything. Your missing my point about that if you prepared your substrate properly, and have set up your fruiting chamber properly, then you'll still get pinning quickly without the need for cold shocking. And if you had a proper water ratio in your substrate, and sterilized the right way, then there is no need for dunking before the first flush, and placing the cakes directly on the perlite after each flush works just as well if not better than dunking after each flush.
