bruising happens to anywhere that is roughed up. my friend shakes his jars until the chunks are an even consistency(ie. no chunks). i don't thinks there's any weird reason that would cause it to only bruise in the center maybe just a coincidence(as far as i know!).

the bruised chunks were walnut size and came out bruised immediately after emptying the jar

If it is dry you can rehydrate by gently running faucent into tray letting tray overflow for 3-4hrs, then drain off excess water by poking holes or placing something flat,stiff over top and tilting.
