Anybody use an electric PC on a gas flame?

I have a 25qt All American Electric steam sterilizer. The thermostat allows the pressure to vary up to 10psi between on/off cycles. This is annoying, because it requires constant attention. This causes me to ask the following questions:

Is this pressure swing a real problem? If I have to live with a 10 psi pressure swing, should I let it go from 5-15psi or 10-20 psi?

Also, has any one used an electric PC on a gas flame? It looks like it shouldn't matter, but I'd hate to ruin my baby, it wasn't cheap. I've used regular PC's before, and gas seems to be a better way to control temp and pressure.

I should say that as of yet I haven't had any contam problems, but the last batch of rye jars seemed like they were caramelized. This batch got up to 20psi. I just did a grain transfer so I haven't seen any results yet. Thanks in advance for any help you may provide. Peace :cool:

If it has a thermostat does that mean you can set the temperature?

this to me sounds like taking one of those electric crock-pots and putting it on the stove... I dont think it's such a good idea... do you have apicture of this device you have?

That is exactly the PC that I have, z@z. The thermostat regulates the temp, but the temp/pressure swing between on/off is like 10psi. I'm thinking a gas flame would be easier to keep a constant temp. I was just asking if anybody had tried this before, or if the temp swing was that big of a deal. Any thoughts? Thanks.
