Anybody got a baddass rye bread recipe?

I ask here because I know some folks around these parts know bread. I tried this recipe: http://www.recipezaar.com/German-Dark-Rye-Bread-43285
but I only ended up with a chewy rock. Any ideas?

Here's the recipe my gramma taught me. Polish rye!! Yummy!
Ingredients
* 3 teaspoons bread machine yeast * 3/4 cup rye flour * 2 cups bread flour * 1 teaspoon salt * 2 teaspoons caraway seeds -- optional * 1 Tablespoon vegetable oil * 1-1/2 Tablespoons molasses * 1 cup water
Directions
1. Makes a 1-1/2 pound loaf - Heat your oven to 350 F. 2. Combine all dry ingredients except yeast. 3. Add liquids to bottom of bread pan. 4. Add mixed dry ingredients on top of liquids. 5. Make center in the middle of dry ingredients and add yeast. 6. Mix, adding a little extra bread flour if you need it. 7. Knead dough for ten minutes - don't skimp on the time! This is what turns a rock type loaf into something softer, earthy, full of goodness. 8. Let rise until doubled in bulk. Punch down, then place into a well-oiled bread pan. 9. Bake for 45 minutes or until lightly browned and it sounds hollow when tapped.
Enjoy!

I kneeded it for about 5 minutes, might have been a little too short cause it wasn't rising for shit.

THanks, I'll give that one a try tonight, I've got everything I need to make reubens, just no rye bread.

I just used this recipe, it turned out great. Instead of bread I made bagels with it (boil method). I'm currently have a rueben heating up in the oven.

This is a wonderful bread recipe. It was first put online in 06 when Jim Lahey gave the recipe to Mark Bittman at the New York Times. Original video:

I've only made the plain no knead bread many times with regular bread flour, but just sub 1/3 of the regular flour with rye. Super easy, just takes a bit of time. I'm very happy with the results.

This looks awesome and I'm trying it right now, but not with any rye substituted yet, I'll try that the second time around. I just finished my mix and will cook it in the morning. I'll report back.

Yay! I'm so glad it turned out for you! I love rye bread. I bet it made an awesome rueben!
I think I'm going to bake today. I'll take some photos and post them here.
