All The Water Evaporated During boil HELP!

Ok, I am making 12 1/2 pint brf cakes which I have done plenty of times in the past with success, but this time i decided to boil them a little longer than usual. Well, id say about an hour and fifteen minutes into the boil I can no longer hear my jars bouncing around on the bottom of the pan so I run over there and take them off of the heat. Its possible that they were like that for 5-10 minutes. Should I start over with new jars or should I just try using these? What can I look for before I have to try again if anything?

start over and dont steam them longer than the tek you are using says.

nah i'm not using a pressure cooker. When I usually do this, I just put them in a large pot and put water 3/4 up the jar and put on a tight fitting lid.

ok the bigest mistake i see people make is they try to wing it. dont wing it! follow the tek exact. if you follow the tek you will save yourself a world of hurt

They dont appear to be burnt on the bottom or anything, but i'm afraid that the direct heat to the jars would start to evaporate the moisture from the brf cake itself. right?

This is a possibility. You would be safe to start over and follow the tek.

Why not just add some water? Mine has boiled dry before and caught a towel on fire haha.

If you have extra syringes of spores or LC and they got nearly enough of the recommended cooking time I'd just use them and see what happens. If I'm not mistaken (and I could very well be) wouldn't recooking the cakes throw off their moisture balance. In any case I'd use what you have now (thats if you have the extra supplies) and do another round of cakes either later today or tomorrow.
If you don't have the extra supplies then I wouldn't chance it one bit. I'd just start off fresh later on.

Throw them out and start over. The jars are not supposed to be sitting on the bottom of the pot, nor are they even supposed to be in the water. It's the steam that sterilizes. Put something down to elevate the jars out of the water, and next time turn the stove burner down as soon as the steam begins to escape from around the lid, to the lowest stove setting that keeps the water boiling. Start your timer at that point and go 90 minutes. Check half way through and add more water if necessary.

Yep, as a noob at mushrooming, I'd follow everything exactly. Who knows what you could have picked up from the pot or what moisture you lost. Just start over and you should be fine. Remember, you learn most from your failures
