Pint size jars going for 6 weeks in opt. conditions...?

Well, I am having some issues and concerns about my mushrooms. I inculated in pint size jars and they are still not fully colonized. They have REALLY slowed down the past two weeks and I am afraid the moisture level is really starting to fall inside the jars.
Most jars are colonized except for the bottom. Can I birth these and still use them or will the crumble. Really, I am just wondering what I can do with these not fully colonized as they aren't going anywhere in a hurry. I am a gardener and I have patience, but these really are toast with the bigger jars.

I had a problem with some rye jars taking a long time to colonize and they looked like the grains that weren't colonized were starting to dry out. So what I did was to turn them upside down with the lids facing downward. I don't know why, probably because of the heavier carbon dioxide being able to flow down and out and thus helping GE, but they colonized normally after that.

when the bottom is the only thing not colonized i flip the jars over and usually colonization on the bottom will dramatically speed up. in fact. i flipped 6 jars last week that stalled and they finished in a few days.

half-pint jars are what recommended because anything larger takes a damn long time. my first set of half-pinters went 5 weeks and still weren't fully colonized. im still a newbie, but i would say just hang in there and watch for contams.

One of the reasons why pints are not recomended.
Pint jars are prone to slow/stalled growth
Pint jars also allow the substrate to compact due to gravitiy and thats why the bottom wont colinise. Also pint jars have issues with gas exchange and moisture will drain to the bottom.
Use half pints that are taller than they are wide. 1/2 pints and also 1/4 pints perform best with pf tek substrates. For these reasons. Even in 1/2 pints the substrate will compact slightly but not as much as pint jars which can seriously slow colinisation.

Yeah... For the next round, I fully intend on using 1/2 pint jars. However, I am stuck with what I have for right now. Now that conditions may really be awful in the bottoms of these jars, should I attempt birthing or something. I understand the usefulness of the information in your post, I just am really looking for "this is what I would do...".

If they're mostly colonized you could try pulling them out, and scraping off all the uncolonized substrate - then dunk/roll/birth
