From the outside of the jars it looks like water. When I birthed the jars that 'condensation' is a very sensitive gelatin-like stuff.
I'm sure its mycelium but I never heard of this gel-like stuff ever being discussed before.

I previously birthed 4 jars almost a week ago with same stuff on it except not as much build up. I assume its some kind of mycelium action.
Three of the jars birthed are in a casing and the other in separate FC as a cake alone. Neither grows show any sign or smell or contamination whatsoever.
The 'gel' it-self is slightly cloudy, but mostly clear, with same color of mycelium and no odor present beside that fresh mushroom smell. Its also very sensitive, not at all a hard gel.
Again I'm not at all worried about it. I'm Just surprised I never read anything about this before due to how much research I have done here

Best way I could describe it is mycelium jelly 
When I birthed jars with this before the cakes and jars had the gel stuck on them. When I washed the cakes the gel easily rubbed off.

What is the substrate mix in the jar?
It almost looks like whole cooked rice in the jars.

looks like brf. notice the verm layer at the top of the jar in the first pic? i would guess these are pf jars.
correct me if im wrong. just guessing.

It has to much water some how.
Is it to much water in the mix or
is it getting water from the pasteurization process leaking in the top!?!

5 1/2pt jars
=
1 cup brf (organic)
1 cup water
2 cups verm

Yep! Thats correct.
Did you pasteurize or sterilize and how deep was the water?

Only difference is this gel appeared before during colonization and before the jar was every opened.

How many cc's of spore solution are you using per jar?
As I asked before "Did you pasteurize or sterilize and how deep was the water?"

On my other cakes after dunking them the gel stuff, that i couldn't rub off, was not noticeable taking them out of the dunk. Maybe the gel dissolved or something.
It was and is completely gone.
As mentioned above I cased 3 cakes and put one cake in a FC by itself.
The cake that is in a FC by itself shows no gel at all, just a normal healthy look.

As far as CCs I tried to be as careful as I could to only do .25cc per inoculation hole or 1cc per jar. But because I'm inexperienced to the touch and sensitivity of a syringe I remember going over a little bit in some holes.

Jars were sterilized using a pressure cooker and raised so no water could touch the jars.

They look fine. I always rinse the slime off under the faucet at birthing, prior to the dunk and roll.

I have been getting that too.. since it's not an odd colour I haven't been too worried about it. But yeah, there's a clear slime on my mycellium. Just metabolites you say? Well, now I know not to worry.

I had similar "pee" in a few of my jars.
The water content was consistent throughout all 12 of my 1/2 pints, as was the ambient temp. However, I noticed a few jars seemed to just get wet.
Some got "wetter" than others, but it became apparent that some sort of liquid was being created, not just condensed onto the walls.
Fuckers are pissing on themselves.
