JAR LIDS: Rubber side UP!
    #884197 - 09/15/02 07:55 PM (21 years, 6 months ago)

Most dogs and cats already know this but.....

Of my first twelve 1/2 pint PF Jars, I did six lids up, and the other six down with the rubber against glass. Of the 6 with the rubber side up, 2 are fully colonized and 4 are colonized everywhere but half of the bottom. Of the 6 with rubber side down, colonization is not even 1/4 or 1/5 complete in most of them. I attribute this to air exchange. My jars have all remained sealed tight since boiling. I have flipped and untaped the 6 fully colonizing jars. I will untape the other 6 tonight to see if that speeds em up.

I realize PF TEK says to put on lids rubber side up, but I have read in other sources that it makes no difference, you can do it either way. I did 6 lids down thinking it might cut contams. But in hindsight, colonized mycelium is probably a better barrier against contams than the lid seal.
As usual, PF TEK proves to be solid all the way around.

someone I know down the street in holland that I know, just innoculated 8 taz jars using the rubberside up method. I've had great sucess the other way, so I'll see how this works. A friend of mine said that it wors better, so in my book it's worth a shot.
I'll post how many days it takes, I talk to him regularly.

I personally don`t think there`s any difference.
I think your experiment might just have been a fluke.

My friend says micronmagick makes their pre-sterilized jars this way. FYI.

one of the joys of having the seal up is that the lid sticks to the band when opening and closing, rather than the jar. When the seal sticks to the jar, it can often tear tape covering your innoc holes.

I agree, if the tape comes off even a bit, it can make for a lot more possible contams gaining access to the subst.  I think i will switch around and see what it does for me.  Aside from the tape thing, i cant see how it isnt a fluke

Mycelium grows better under higher CO2 concentrations, so I think either way, air exchange is not of great importance until the jar has almoset fully colonized. My friend does hers rubberside up, but keeps the lids tight through out colonization unless the presence of too much moistue needs to be removed, then she loosens the lid some. You said the jars were uncolonized near the bottom, either flip the jars or shake them. Normally if you have more than one jar doing the same thing theres something lacking. Sounds as if they need to be shaken. bluhoney

Hmmm... Shake pf tek jars... Must be some scientific explanation of what that accomplishes, I just can't think of one...

After many batrches with both rubber side up or down I have seen only one difference, and it is apparent only if :

1)You are boiling your jars instead of pressure cooking or autoclaving.

2)you are using tape over the holes and part of the tape sticks to the outside band.

when the tape does this and you loosen the lids for the sterilization, the whole lid lifts up, this allows for more vapor to come into the jar. If the rubber or lid is facing down, the rubber sticks a little and even though if the tape is sticking to the band the rubber down prevetn some vapor from coming in.
Ive seen a direct relation with this situation and the slowing down of colonization at the bottom of the jar, mainly because of more steam going into the jars, and collecting as water in the bottom.
I go with rubber side up and and tape only over the hole and NOT touching the outer band.

"I go with rubber side up and and tape only over the hole and NOT touching the outer band. "

Yep. I did what you do. (Except the half dozen with lids down).
Then at about 70% colonization I untaped the 6 fast growing jars. I believe mickey rourke suggested this. That strengthened the colonization more. Most of these bad larrys are about ready! I've also untaped the six with lids down to see if they speed up. They are only about 1/4 colonized at the most.

The shaking with the PF jar was not explained thoughly, Im sorry for the miss direction . If you shake the jar up and down, the cake moves back and fourth from top to bottom causing air exchange from the top to the bottom. In this meaning of shaking I didnt mean to say to try and break the cake apart.LOL Sometimes it works better than just turning the jars over. bluhoney

You guys are going to find that if you put the rubberside down, a lot of times it will stick and you will have to pry it off and end up bending it which will them prevent it from lying flat and creates a window/doorway for problems.

These are canning jars and lids, normally used for pickles and jams. The rubber lid are designed to seal for a long time.
