Pressure Cooking WBS

I pressure cooked three quart jars of WBS today, the jars looked like this


Foil
Double Layer Coffee filters
Lid and Lid Ring
Double layers of Tyvek
Jar
(in that order)

After i took the three jars out of the PC the corn looked a little darker than it had been when i put it in and there was a little bit of moisture visible on the top 1/3 of the jars not filled with WBS. It also had a smell of cooked corn...

The coffee filters were also wet so i took them off and replaced them with dry ones.

Should these jars be emptied and refilled and re-PC'ed or do you think they are allright?

How long was the PC and at what PSI?

About ~60 minutes at 15psi

I have used Doc's WBS tek many times with success.  What tek are you using?

The lids depicted in Doc's tek have a hole stuffed with polyfill (for gas exchange and to inoculate through) and a layer of tyvek under the lid disc (for a extra layer of protection).  Then the lid is covered with tin foil for PC'ing.  The coffee filters are put on after the grain is inoculated.

If you put the coffee filters on before PC'ing, for sure they will get wet.

Your double layer of tyvek should protect you from contams ...... you are probably OK.

Time will tell.

Yeah i kind of dabbled between Doc's and 6T's teks but yeah, i put 3 more jars in the PC and completely covered them in tin foil just as an experiment and they came out the same, so i think they will be all right.

I think 90 at 15 is a much better bet
