What do Morels, Russulas, Black Trumpets, Oysters and Chanterelles have in common?

Dinner.
The photo wasn't planned although the dinner was.
Cream of Quilted Green Russula Soup. Filet Mignon with Morels sauteed in butter. Beer-battered Oysters with Tartar Sauce and Malt Vinegar. Black Trumpets with Wild Rice. Fresh Sweet Corn. Chanterelles with Apricot/Pineapple Preserves.
I have never had so many species in one meal. I rarely eat mushrooms.

this year is the year of experimenting for me new species to the table. nice Señor hongos , black trumpets are some of my favorite i have not find enouf chanterrelles to have a opinion but i guees i will love then .
that food look real good , hope you enjoy the meal .

Enpo, Beege, there are lots of other flavors in wild mushrooms than the one we all think of as "mushroomy." It's definitely worth trying some of the wild edible varieties. Most of the wild mushrooms listed as choice edibles are far superior to the mushrooms you buy at the grocery store.

Thanks, you guys.
Probably my favorite was the Cream of Quilted Green Russula soup because of the mushroominess. I sauteed them in butter (what else?), chopped green scallions and added heavy cream, a bay leaf, thyme, parsley, celery seed, marjoram, and garlic.
For those that are unfamiliar with the flavors for me these taste like:
Oysters=Fresh Water Perch Chanterelles=Apricots Black Trumpets=Meat Morels=Meat Quilted Green Russula=intensely mushroomy
This was a rare exception for me because I don't eat very many mushrooms.
