help w home fermenting...how can i tell if the fermentation is complete
    #8657208 - 07/20/08 12:12 AM (15 years, 8 months ago)

ow can i tell if the fermentation is complete ?
i.e. the max conversion of sugar to alcohol hyas taken place and that additional time will not cause more fermentation of sugar bto alcohol ?
in theory i should be able to convert a bottle of juice to a bottle of reasonably strong wine (aboot 16 -20 %),correct ?

you need a hygrometer.  check your gravity and make the decision that way.

That, and I believe the airlock should stop bubbling.

Unless you're brewing a high gravity beer most brews will be mostly fermented within a week but letting it set an xtra week to make sure and to help further clarify the beer can be helpful. If you want to do it the lazy man's way just let it set in your primary for 3 weeks and don't bother transferring to a secondary. If you keg you can go directly from primary to keg . Some trub will make it into the keg but that will all come out with the first glass of beer you dispense.

Yeah the airlock should have long stopped bubbling and I believe the person who mentioned a hygrometer meant to say hydrometer , and those work great but can be a pain for some people (lazy people) like me. Refractometers are the lazy and easiest way to get gravity readings. You only need one drop of wort . Here is what I am talking about . They can be purchased cheaply off ebay often for under 20 bucks:

On a slightly different note, vodka is a nice thing to use in your airlocks instead of water. If you get backwash into your fermenting wort by mistake you won't contimate anything and vodka is a neutral spirit and won't change the flavor if a bit backwashes in.
