Don't be scared of dunking, it's entirely beneficial. Dunking will result it better flushes so don't worry about the pinning, it promotes it. If there are already pins, they should be fine with a dunking.
Dunk after birth, the first flush and every flush thereafter.

Also, don't forget to roll after the first dunk. It will also promote larger flushes.

Soaking mushroom substrates has been done for well over a thousand years. The chinese used to soak whole shiitake logs in rivers to encourage them to begin fruiting.
Soak your cakes right after birthing. If you prepared the mixture appropriately, it's slightly dry so as to encourage faster colonization. However, that doesn't leave enough moisture to support a good flush. That's why we dunk right after birthing. If you're unsure what to do, the Dunk and Roll tek is demonstrated on this video. I think just about ALL of us go through this. You spend so much time being perfect during inocculation, you hear people preaching the virtues of FAE and careful misting during fruiting, and then someone says "Oh yeah, just throw them in a pot of water, push them down to the bottom, and leave them in the fridge for about a day."
Once you handle your first colonized cake after birthing, you'll be a lot more confident. And by that, I mean it'll happen as soon as the cake gets out of the jar. There's no way to communicate it through pics online, but those cakes are solid and tough. They can handle dunking with ease.
I'm with tripsis on this - dunk immediately after birth, and again after each flush. This is especially important after the early flushes, because these tend to be the largest so the most water is lost. The cakes will be noticeably lighter and smaller too. After a few flushes, you may notice a drop in yield. At this point, they're using less water because food is running out. Feel the weight of the cake and make a judgment call. If they still feel heavy, leave them alone. Dunking does make them slow down for a day due to the interruption of O2 and the drop in temperature. This is outweighed by the benefits when they need water, but near the end you don't want to weaken them.

Yea i was scared on my first time so i dunked half of them and then rolled them and the dunked and rolled cakes did far better than the plain birthed cakes straight into FC. now i duck after every flush, so if that makes u feel better

I was scared and working with tiny cakes at the same time (1/4 pint) but did it anyways. They will be surprisingly firm once you birth the cakes. Minimal touching is preffered but you could probably play catch with it if you wanted to. Just put them in some clean water, and something like a plate to weigh them down, otherwise they float. Some just dunk in the original jars. RR really knows his shit. Watch the video RogerRabbit posted if you still need more balls to dunk a cake. Videos are one of the best ways to learn especially if you've already read up on things and know they are demonstrating.
