Pasteurized bulk sub smells (only 2 days old)

I pasteurized some bulk sub the other day. Basically a combo of dehydrated horse poo, straw, coffee, coir, gypsum, and verm. Same mix I have used before.

I put it in bags and put those in 160ish degree water until the internal temp gets around 150. The bags I use let in a little excess water so I usually hang the bags over a tub with a couple holes in the bottom overnight while they cool down.

Anyway, it has been 90-95 degrees here and I don't have AC so the room where the bags were hanging was 80+. I was getting ready to spawn and noticed they had a really pungent smell. Usually just smells like dirt/poo but this has a definite sour smell to it. Not rotting but sour.

Think they are still safe to use? Decent amount of sub and I don't want to have to make and pasteurize it again unless absolutely necessary. I also don't want to waste spawn if it is already shot.

Should I use it or toss it? Or spawn 1 tub and give it a couple days to see if colonization starts and then spawn the rest hoping it gets fully colonized before contams get a chance to set in?

Did you leave it at 160 for an hour or more? Or did you pull it out as soon as the center reached 150?

I bring the temp up pretty slow but only leave it in for about 30 minutes once the internal temp hits 150.

Yep.  Sounds like bacterial contamination.  Toss that batch, and try again.  This time make sure that you maintain the ~165 at the core for an hour.

Yeah, I have did this several times before using the same temps and times without a problem. It is probably just the addition of extreme heat after pasteurizing that let the bacteria get a foothold.

I was thinking about adjusting the moisture content and repasteurizing it but I don't want to spend that much time and still have contam problems. I am going to just start back from scratch and do a new batch. I have a bail of straw, 40 gallons of verm, a decent amount of poo, and 10+ bags of starbucks coffee grounds so the material isn't a problem. Just too time consuming.

I may end up using this sub for an outdoor grow. Don't have much room to do an outdoor grow and have to keep it semi-stealth like (live in the city, not the burbs) so we'll see.

Verm was $30 at a hydroponic store (bag is literally 5 ft tall and 2ft in diameter), straw was going to be bought from the local fairgrounds but no one was there to ring me up so......, coffee is from starbucks grounds for your garden (free), and the poo is from mycosupply because I don't feel the need to leech and dry my own poo or have a place to do it.

check the whitepages.com or google for hydroponics stores in your town or the closest big city. If they don't have big bags they can order them for you and it won't seem out of the ordinary.
