stems turning dark blue moldy color while drying out! why?

I've been getting shrooms off of my cakes here the last couple days and they look perfectly fine (maybe a little blue on some stems) But while they have been sitting here drying the stems have turned to a dark blue moldy look. I have them sealed up in a container with damprid to draw the moisture out of them so they are not really exposed to the outside while drying.Just wondering if I should keep them in the fridge or some better place to dry out. But any advice would be greatly appreciated to why these shrooms are turning blue

It's easy for me to say that it is bruising, but without pics I couldn't say for sure. I will say that I wouldn't put them in the fridge unless they were cracker dry and sealed in a food saver type of vacuum. Otherwise, they will rot in no time.

the drying process, by a desiccant like damprid, can cause the water to be forcefully pulled from the cells of the mushroom faster than osmosis would naturally allow, breaking the cell walls and exposing the psilocin to oxygen, thus causing bruising.

this is common. they aren't molding unless the color rubs off...
