Tray cultures and pink stuff

I will be starting a tray culture soon and I have one simple question (which, for some reason, I have been unable to find the answer to). Once the mushrooms start growing, do I need to keep the whole tray in a humid environment, or will the mushrooms with a topping layer of water crystals?

Also, my friend is growing and he has noticed some pink colored mycelium. Does anyone know what that would be (it looks like pink flamingo fuzz)?

Yes, around 90% when cropping.

Contamination, some k ind of mold.
There are several contaminats that are pink/red.
