Well, I alwyays try to soak for 24 hours. The first time I did wbs, a few weeks ago, I soaked them for 24 hours and they turned out great. Had almost full colonization around day 10-13. However, I did six more qt sized jars of wbs, about 3-4 days after I did the first batch. It must have been late, or I was just not being careful, and I didn't soak overnight whatsoever. I rinsed them and all that and then started simmering. Right after I started simmering them I realized i didn't let them soak. Oh well, it was too late and I had already started simmering. So....they turned out just fine. They colonized very fast just like the first six that I did. I shook them at 25% and the did just fine. Next time I do wbs, I am gonna soak for 24 hours, but I just wanted to let you know that I got away without soaking on my last batch. Call it luck or whatever ya want....Maybe try soaking for 12-14 hrs and see what happens. I'd be willing to say that you'll be fine!

Yeah, I followed Doc's tek too. Worked great. I just forgot to soak on my second 6jars. Rookie mistake. But, they still colonized 100%. No contams. Just got lucky i'm sure!
