New Server Job (stress issues, help?)

Well, I've got myself a server position job at Mac Grill, a good move up from bussing tables and crap at fucking Red lobster, aka the lobster shanty. So I'm still going through the training process, but I'm struggling a little on the memorization of shit, plus I have no one to practice serving on...
Anyway I'm a little stressed, but I've cut back a bit on smoking too, just so I can memorize this crap, and that might be stressing me out. Days are feeling very strange, and there are times I feel like things are wrong just altogether, like I'm in the wrong world time and place sometimes. I'm struggling and worrying I'm gonna suck as a server and I'm in need of some good suggestions on memorizing stuff. Feel free to throw any forward.
On the other hand, the food is good there, and I think I'm going to be able to eat there more often than I was able to eat at Red Lobster, just do to the fact that you can create so many more custom meals there. It's Italian!
Are there any other servers here who can give me good advice on greeting tables, memorization, and such?

I would not smoke at all Right now. Clear your mind by going on a run/working out/eating right. Remember to relax and that everyone was at your level at one time or another.

It's really old advice, but: write everything down!
I don't mean notecards or even anything you keep with you. The act of writing something out makes it easy to memorize. When you hear something you need to know, write it down and keep the paper with you. After a little while, you won't even be looking at the paper after you write on it anymore.

i work in a an upscale place as an expo/sous chef; before a server becomes a server, they go through me first. i teach them the food they're serving.
the very first thing i have them grab is a to-go menu & a pen to take notes next to the item on the menu. (write down what goes with a particular dish) the best way to memorize a dish is by tasting it. write down what it tastes like, the texture, heavy/light meal, etc etc & study it at home. taste the sauces, taste everything & write it all down. next, associate everything with their color. (ie; woosabi is green) & tie it all in together. also note portion sizes.
basically, you want to be prepared for those pop questions guests ask because they didnt really pay attention to the menu. know exactly what it is you serve them so you have an answer then, instead of telling them you dont know.
as far as approaching a table, always always take your time. make your presence known smoothly. you dont want startled guests. read the table, before you approach it, everytime you approach it. (ie; dont interupt a couple having a moment) just be yourself, relax, take your time.
