When it is time to *cut* them down?

ok i am very very new to this, and will be starting my first run at it tomorrow.

For the past month i have came here and read and read everything i could find. I have read up on all of the different tek's, way's, etc. etc.

My question is this: When using a casing or cake procedure, When it is time to cut the first flush down. What is the proper way??

*just pick em like you are picking flowers
*cut with a knife/scissors
*dig down a little bit to cut at the base (casing)

I have read the FAQ....a few times actually.

To all of you this is probablly one of the most dumbest questions yet. I gotta start somewhere...

Harvest your mushrooms right after the veil breaks. I pick mine by twisting them at the base of the stem.

Just give them a little twist and a pull. Make sure that you don't pull up any chunks of mycelium with your mushies.
