It's been 17 days, the cakes are pretty much all white, but, you guess it, they wont start there pinning! What can I do to help them along?

Where are you keeping them?
They need light exposure and Fresh air exchange to pin, along with adequate humidity.

Well then you need to wait until the outside is COMPLETELY white, then wait another week so that the inside of the cakes are colonized. THEN take them out of the jars and put them into a fruiting chamber, where you need to keep the humidity in between 95% and 99%(the more the better for cakes), fan them 5-6 times a day(optimally, 3-4 minimum).
Also to help with pinning and a better flush, dunk the cakes in water for 12-24 hours, then roll in vermiculite(before putting them in the fruiting chamber).
You don't need the cakes to pin inside the jars. Waiting for them to do that is a complete waste of time.

Sounds like you need patience. Pretty much all white is fine after 17 days if they're still in their jars. Do not take them out until about a week AFTER they are completely white. Take your time and you will succeed. Sounds like you're using the PF tek, if so..follow it to the letter esp. the first few grows. Good luck.

Maybe some cubensis, take longer to spawn, right now I am spawning the hawaiian Psilocybe cubensis.

follow basic pinning triggers.
1. frequent air changes (i hand waft air into fc or u can get an air pump)
2. light 12/12(i just leave light on in day and off when sleepin)
3. humidity(basic rubbermaid with holes is what i use, or get a real deal setup)
