Can you case poo that's 99.5% colonized?

I have a tray thats totally colonized in the middle. Just a few tiny spots of uncolonized poo. Case, or let it sit longer? Thanks!

You can apply the casing layer any time after about 75% to 85% colonization of the bulk substrate. Cover with foil and allow the mycelium to break through the surface in a few areas before exposing to fruiting conditions. Read up on 'patching' if desired. It can greatly improve the quality of the pinset, but it's an optional procedure.
