I have a big AA941. 41.5 qts. I am about to dive into all grain brewing. Can I use aluminium to boil the wort?

I won't use my AA. If you're around a walmart pick up a stock pot to use, there not as heavy.

it is recommended that you not use aluminium for homebrewing because it will contribute an off flavor to the beer.

Stainless steel yo.
Or copper if you're a rich man.

It's not good to cook anything in aluminum really, so I wouldn't recommend it. I wont even cook camp mac n cheese in an aluminum pot

Well I generally don't.. but why not? Every food serving place I've worked at has used stainless steel pots and such

Most of the big stock pots are aluminium.

They're lighter than SS and conduct better heat.

So we did it yesterday.
I did a County Ale clonebrew. It's a british canadian ESB, I think. Here's the recipe: 7 lbs 2 row british pale malt .5 chocolate malt 1 lb crystal malt .5 wheat Mashed for an hour at 60C with ~3 and 1/2 gallons, sparged at 76C with about the same volume. I couldnt find the iodine in the cabinet so we went without a starch test. Total liquor volume was about 6 1/2 gallons. I found a lot wierd stuff/particulates in the last gallon of liquor and I didn't keep it. This was boiled in two different kettles simultaneously. It was boiled with 1 oz Goldings 5AAU and the aroma hops were 1/2 oz Goldings. The boiled worts were combined in a bottling bucket and measured 4 gallons. The sink was filled with ice and the wort took forever to cool. Meanwhile I rehydrated my yeast and then siphoned it down into the carboy and pitched. I got it in the basement at 12:30AM and we started mashing around 6PM.
When we were done sparging we actually bottled up a malt extract plus specialty grains honey weizen that has been in secondary since around 4/20. We tasted it flat and at room temperature and it tasted exactly like a Franciskaner Hefe. I boiled a quart of gyle from the ESB for ten minutes and used it to prime. I couldnt find any corn sugar in the whole house.
As far as the all grain brew goes here's what I have learned: Buy grain from a store with a mill, Drill more holes in the lauter tun, and based on the final wort this time, I am going to try keeping all the liquor. Find a larger kettle, Figure out a new cooling method, Always rehydrate before pitching dry yeast. I think thats it, but I'll keep thinking about it.

Ive only made two batches of beer so far. Both times I have used all grain recipes and I think the biggest mistake of both times was using crystal malt. The first batch we had about 3 pounds of it, which was a disgusting disgusting beer. Of course we also had half a pound of 11% AA hops. The second beer was a wheat beer which only had one pound of crystal malt. Its a pretty delicious beer, but the caramel is too strong in it from the crystal malt. For my next beer I am going to try and make a vertical epic beer from Stone. www.stonebrew.com/epic They have all the recipes online.

I don't like aluminum for cookware. Cooking anything acidic in them causes off flavours.
