Question about pressure cooking

Sorry to keep posting what are probably stupid questions but what's the correct answer to this...
Immediately after pressure cooking jars one should:
a. first open the vent cock on the cooker to release the steam, then promptly remove the hot jars
b. open the vent cock on the cooker to release the steam, but leave the jars in until they cool to room temperature
c. leave the vent cock on the cooker close until the cooker has cooled, and then remove the jars
d. any of the above since it doesn't matter

well it doesn't matter in the strictest sense of the concept.
venting the steam from a hot pressure cooker can at times cause the jars to explode.
how much of a hurry are you in?
according to the manual from one of my pressure cooker mfg's. one should wait untill the pressure relief button has dropped before removing the regulator.
for ideal sterile proceedure, one should leave the jars in the cooker until they are at inoculation temp and then proceed directly to inoculate

My manual suggests for jars to allow the PC to come to room temperature without opening the vent/escape. I allowed mine to sit over night...worked perfectly.

my friend usually leaves his overnight, but my pressure cooker says you can rinse it under cold water to immediately cool the pot and reduce the pressure within.
i tried it just recently with an artichoke, and it works great. i never in a million years would have done it if it hadn't recommended it (it says you pretty much have to quickly cool it if you're making vegetables or fish). i'm a big pussy when it comes to hot metal and pressure

UHID et al,
Rapid cooling is fine when using the PC for cooking food...but NOT when you have jars inside...they'll either crack or explode from the sudden temp/pressure changes...

Sounds like the verdict is in! I was thinking that it would make sense to leave them in until they've cooled since the inside of the jars would essentially have a negative pressure when cooked, and therefore would have a tendancy to suck in air along with airborne contaminents if they were allowed to cool outside of the sterile pressure cooker.

Just some further advice, leave the jars sealed in the PC until it's time to innoculate. You can still get contams on the outside of your jars so why expose them to the open air any more than need be?

Boppity, I will definitely do that. I will also use the oven tek for innoculating this time as well.

yeah, that's why you never want to put your jars in the fridge or something. suck in all that air, plus all the mold spores in your fridge.
i like to take my jars out of the PC and put 'em in my oven to cool so i can start the next set of jars.
