When you cook a lot of items (red meat is horrible for it) above the boiling point of water, some of the aromatic compounds in the food are converted into carcinogens.

Carcinogens = teh bad :wink:

Why are carcinogens bad? Just look up the definition of "carcinogen" and you'll find out why!

A carcinogen is a chemical that promotes the growth of cancer.

I assume this is not present in good beef jerky?

I used to make my own, and it NEVER gets hotter than 150ish... I may start making it again, because homemade jerky is YUMMY!

Because benzene - the simplest aromatic compound - in carcinogenic, along with most compounds formed by a benzene ring and a small functional group.

The compounds that exist in meat are complex and large molecules, so while they contain one (or more) rings in their structure they are not carcinogenic (or not very...).

When you cook the food, you break down the complex molecules into smaller ones, but smaller ones that still contain a ring structure. Those smaller compounds are the real bad ones for you.

burnt food(meat)is good for your health because it obviously was cooked at a safe temperature.

I've always like the taste of many burnt foods.:yesnod:
I burn part of my steaks on purpose.
I won't eat a hamburger that doesn't resemble a hockey puck.
Slightly burned chocolate chip cookies are great!:thumbup:

That's kinda what I'm thinking...then again, you shouldn't underestimate the stuff you put into your body on a daily basis.

I wonder how bad it would be if you only ate it like, 2-3 times a week (and the rest of you diet was extremely healthy).
