My jars (6 1/2 pint brf jars) have been colonizing for about 2 weeks (about 1 week they were @ ~70 degrees and the other week they have been at 81) and it seems they have either slowed down in colonization or stalled completely. I believe it might be due to over saturating the substrate. If there is water collecting on the sides of the jar (especially where the mycelium has pushed out) does that mean there is too much water and do I have to start over or can i try and fruit the colonized parts? The least colonized jar is about 50% colonized while the most is about 80%. Thanks.

I wouldn't fruit them until they are done colonizing. Give it some more time.

A little water collecting inside is normal from what I have seen.

Do you have the holes in the lid taped? If you do I'd suggest removing the tape to let them breathe a little.

You may also try flipping them over.

Four small holes just bigger than an 18 gauge needle in the top of each jar, nothing covering these holes (there was alumnium foil covering them for the first 5 days however). Just curious but what would flipping them over do ?

I have heard that flipping them over will allow the heavier CO2 to drain out.
