Pasteurization temp too high...

The temp while cooking 2 bags of poo got to about 186F for about an hour. Should I re-pasteurize or is there no use now that the beneficial bacteria may have died?

If you have more I would start over.

Wasit the internal temp that got that high or just the water temp?
If it was just the water temp I would say your prolly ok.

The internal temp read 185.3F, but the thermometer didn't reach the center of the bag. This is the the last of my cow shit. I have a brick of coir that I'm trying next but I kinda want to salvage this poop.

Well all you can do is try it out you may be fine just be sure that your water content is ok and mix in enough spawn with your substrate so that it colonizes fast to lessen the chances of contams.

I only have experience with horse poo. But I've pasteurized at those temps many times and it never caused a problem. I use a 1:4 spawn ratio.

Well, you definantly don't need to re-pastuerize. Give it a shot as is, just be sure moisture content is still optimal.
