Did I kill my WBS?
    #6342141 - 12/06/06 07:56 PM (17 years, 4 months ago)

I just pressured cooked 4 pint jars in my PC. It only gets up to 11psi so I pressured cooked it for about 100 minutes. Everything seemed great until I opened it up, and found NO water in it. It was bone dry. Thankfully I had cloth between the bottom and the jars.

Are the jars still good? Should I redo them?

If it smells burnt they are probably not good. If it doesnt then I wouldnt worry about it, just make sure you get enough water next time. My friend was a idiot one time and left it on for 3 hours and the PC melted together and the jars were brown and burnt and smelled horrible.

Did you soak or simmer ??,I would knock them up anyway and see what happens as an experiment but that is cause I make tons of LC so I always have it to waste on weird things like that,If you are working with limited amounts of spore solution you may want to just redo your jars

Soaked and simmered. They look kinda wet still.

Should be fine as long as it still smells like sweet bread.

Start over and do it right.

Next time, when pressure is reached, turn down your stove to the minimum setting that will maintain your 11 psi. The only reason pressure cookers run out of water is because people fail to follow that simple step, which is in the instructions of every PC I've looked at. I've done four hour PC runs with negligible water loss.

Yeah i left it at too high of a setting. Good thing I just happen to have 4 jars worth of extra hydrated WBS.

Not worth the risk of these jars being worthless.
