Preparing Chanterelles?

Whats the best way? I assume butter, etc.. wondering if theres a tasty way to prepare these buggers.

Get some butter going in a saucepan and add the mushrooms and some shallot. Cook a bit, then add some wine. Lower heat.

Pan sear some scallops in butter with a bit of pepper. Place on a bed of basmati and top with your sauce.

OR, cook them in butter and use them in an omelet.

OR, cook them up in some butter, add some garlic, place on crusty french bread and enjoy one tasty sandwich.

hrmm, what I ended up doing was geting some oil really hot, and about a tablespoon of butter, adding a dose of thai chili's two cloves of garlic, some fresh chives basil and rosemary, red onions, and mushrooms. Letting that just sit and sauté for a second. I ripped up some chicken breasts that I had cooked the nightbefore. shredded em and added those in there. Adding salt pepper, a dash of sherry, then sliced up smoe potatoes. threw those in there with a wee bit of chicken broth and some warcestor sauce. When it all starts to come together, I added some lemon grass and corse ground black pepper, hand cracked, and thats that. I had a ton of chanterelles. There was more of them then anyhting in the dish. But it was most delicious.
