Hen of the woods?Updated Pics!

Hola, I found what I believe to be a hen of the woods,
This being the smaller one I found all underthe same really tall pine, it was in central park, alot of walking goes on around there so I didnt expect to find anything then I noticed these. The underside is really white and smells most delicious. There were three otherones bigger then this.

Im almost 100% it is, when its cut up and clean , it looks so good. I'm going back for the last three, there so huge. I have so much, I'm willing to dehydrate and trade.

Actually the more I look into it this might be a umbrella polypoer, do the central stem this has. I know the hen of the woods(Grifola) has no central stem.

Awesome, in the morning I'll take macro's of it cut up, it looks so delicious, thanks. It'd be nice to know wheather this is a Polyporus Umbellatus or Grifola.

They dehydrate nicely from my experience. I'm jealous. Go easy with your first meal as some people have a difficult time digesting this one. georgem

I think they're an excellent mushroom myself, as well as most people I know. When dried, they taste very similar to an Almond. Very good with a wide variety of foods, dry or wet. Nice find!

I wouldn't dehydrate it, might get as tough as wood! Your probably best sauteeing and then freezing.

Well, I don't think they would be leathery once they were reconstituted. You'd want to sautee then freeze, because freesing mushrooms raw makes them lose all their moisture... really gross. Just imagine a sponge.
I'd do some both ways

This is true with most mushrooms, Hen of the Woods is the exception to the rule. They freeze well raw and keep their moisture well. Most mushrooms you want to saute first before freezing to pasteurize them. People have gotten food poisoning from frozen uncooked mushrooms that have had a bacterial bloom when they were thawed. With the Hen of the Woods bacterial contamination is not as much of problem they are very resistant to it.

Polypores don't reconstitute from a dried state well at all in my experience. The beef steak fungus (Fistulina hepatica) and chicken of the woods (Laetiporus sulphureus) reconstitute poorly if dried. They however freeze well in a raw state or sauteed.
Hen of the woods (Grifola frondosa) is a polypore too, I seriously wouldn't risk dehydrating them!

definitly grifola frondosa < hen of the woods>, and they do dehydrate well. pick or cut the "petals" off and brush clean, then put in salt water. older specimen get white fleas sometimes depending on the soil type. an intresting side effect of raw grifola is they tend to numb your throat...something they dont do cooked. many swear they get a vitamin rush. you can also saute and freeze or pickle anything you cany eat fresh. around here oaks and pinoaks are the best trees to look near for these.
