When to harvest turkey tail?

So, I have a stump in the back yard that has turkey tail growing all over it.  When's the best time to harvest it--can you see them sporulating?  Thanks! :laugh:

I don't know when the best time is, :shrug: I like to pick them when the undersides are still bright white.

Well, parts of the fruits were starting to turn darker gray/brown than the others--I took that as maturation so I decided to harvest.  There's some more spots where they should have some more poking through, soon.  :laugh:  And another stump nearby looks to be having some development, too.

I find turkey tail everywhere, trouble is it always has little teensy weensy (pepper-fleck size) beetle things on the underside.
