Millet Troubles
    #5764944 - 06/18/06 04:29 PM (17 years, 9 months ago)

So I cooked up a few jars of millet, and i just did the kind of one-size-fits all grain technique. I soaked it for 24 hours, simmered until i saw the first exploded kernel, rinsed it heavily, drained for 30 minutes, loaded it and PC'ed for an hour. When I took the jars out of the pressure cooker, i see a whole bunch of beautiful whole millet kernels. But when i shook it all the kernels on the inside (not touching the glass) had exploded. The FAQ said to just cook it like any other grain, which is what I did, but it became overcooked and mushy (if you want to go the culinary route) during the sterilization procedure. Does anyone have a good way to do millet?

just soak for 12-24 hours and no simmer, use a teaspoon of gypsum for each quart

you overcooked your grains. I think this happens more often when you do the soak plus the simmer. Personally, because im lazy and dont like to wait if dont have to, i skip the soak and go straight to the simmer.

Keep in mind you should find what works best for you, what pris suggested works well too. The only difference is about 23 1/2 hrs worth of waiting lol.
