Fruiting Temps and Initiating Pinning

From what I've read, to initiate pinning you need to introduce some amount of light and drop the temps to 75F or so. My problem is that I live in a fairly hot climate so the 75F thing is going to be a real bitch over the summer.
What would happen if I placed my colonized, ready-to-be-fruited WBS/hpoo aluminum tray into a mini-fridge? I could "dial in" a 75F temp by putting the mini-fridge on a timer. It would require some experimenting to get the right temps but I'm sure it could be done.
Once pinning begins, what happens if I remove the tray from the fridge? Is fruiting a process that, once begun, continues? Clearly the fruit growth will slow down since temps are sub-optimal but I'm wondering if they'll stop altogether.
This is just a subject I'm not very clear on. The notion of cooling doesn't seem to come up much in these forums and I'm wondering how other members manage.

Ok, so this so-called "cold shocking" is something you do to trigger but the temps don't have to be maintained?
Is there a benefit to actually maintaining 75F and if so, is it large or small?
Thanks!

I don't know what I'm growing, unfortunately. Long story short the vendor didn't label the replacement syringes. It's probably Ecuador but it might be Texas.
If maintaining 75F is no better than a cold shock then return to room temps, or close, I don't think I'll bother.

like hyphe said its just another trigger.........to me a 5 hour sit in the frige cant hurt a damn thing it can only help.....u want as many pins as possible, esspecially if your way out of optimal temprature during the fruiting cycle

Optimal fruiting temps are crucial. If i didn't put the AC in, i don't think i would have gotten a good pinset.
Also FAE is required along with light.
TMC states 1-3 air exchanges per hour.

I'm ok with the idea that ideal fruiting temps are critical (if that is, indeed, the case) but there is very little discussion about how the Average Joe can pull this off. The best answer I've been able to find is by throwing bottles of ice into a TiT. But I'm doing a monotub.
How the heck to I get my monotub to 75F and keep it there?
