This is not an important or breaking story. But, I just love it when local papers run mushroom articles. Plus what a great picture! Mushrooms make everyone smile. :smile:

CANTON -- Every fall, we get a couple calls from folks who have found giant mushrooms in the woods or even in their front yards. Lucky ducks.

Mushrooms add an earthy depth of flavor to just about any dish, from humble casseroles to gourmet sauces. Even if you can’t find them in your yard, they are inexpensive, always in season and low in calories.

Try roasting mushrooms with other fall vegetables such as squash, sweet potatoes, eggplant and onion. Chop the vegetables, toss with a bit of oil and herbs, then roast in the oven until browned and tender. The mushrooms shrivel a bit, but the flavor is intense.

Or add mushrooms and feta cheese to creamed spinach to create a Mediterranean-style sauce for fish or chicken. Joyce Sholtis of North Canton prefers her mushrooms unadorned.

“I’m a big mushroom lover,” she said. “My favorite way to eat them is just saut? them in butter. I tried breading them once but I didn’t like them.”

If you are saut?ing mushrooms, give them a boost with a bit of minced garlic, or a pinch of thyme, or a splash of red wine.

Shelties will be enjoying piles and piles of saut?ed mushrooms thanks to her brother, who found a giant puffball mushroom in an old orchard near his Alliance home.

“It’s not treated. You can’t eat them from yards where people put chemicals on their yards,” Shelties said.

Puffballs, firm, round mushrooms that can weigh as much as 50 pounds, have a mild, nutty flavor. It is perfect for Chicken a la Marring, a dish reportedly created by Napoleon’s chef to celebrate a military victory. Marring gained additional fame when Julia Child demonstrated the dish on her television show in the 1960s.

This version of Marring from the Mushroom Information Center is easy and quick. Simply saut? boneless chicken breasts, then saut? mushrooms onions and garlic. Add chopped tomatoes, wine and spices, then braise until chicken is tender. If you aren’t a fan of the called-for tarragon, try substituting thyme. If you don’t have white wine, no problem. Some Marring recipes call for red wine or sherry.
