Carmalized-Onion Smashed Potatoes

Carmalized-Onion Smashed Potatoes - Serves 4-6

2lbs Red Potatoes
6T Butter
2C Chopped Onion
2 Garlic Cloves - minced
1t Salt
3/4t Dried Marjoram
1/2t Sugar
1/2t Pepper
1/2C Half-and-Half
1T Chopped Fresh Parsley

1. Put potatoes in a pot and cover with cool water. Bring to a boil over high heat. Reduce heat to medium and cook until tender(15-20 mins). Drain and return to pot.
2. In a large non-stick skillet melt butter over medium-high heat. Add onions, garlic, salt, marjoram, sugar, and pepper. Cook 2 mins. Reduce heat to medium-low and cook until golden(15-20 mins). Remove from heat.
3. Mash potatoes and stir in onion mixture, half-and-half, and parsley. Top with extra butter and/or parsley if desired.

I love carmalized onions for samiches and burgers and often make your recipe but I add a bit of baccon and egg for breakfast, but usualy at supper time.

Lots of good Indian food recipes for carmalized onions...
