Anyone have enchilada sauce recipe?

Does anyone have a good enchilada sauce recipe? Most of the recipes on the internet are shit, but it seems that the way to go is to get about 20-some chiles, de-stem and de-seed them, slice up the 'meat' of the chiles and soak them for 2+ hours, food process them using the soaking water, and then use this liquid with some tomato, cilantro, onion, maybe garlic, maybe some sour cream. Anyone know what sort of flourishes to use? Last time I made the sauce I had to BS it because the supermarket had no suitable chiles. Oh, and I'd rather have a red than green sauce, and not too hot - or I'd like the spicyness to be adjustable.
Homemade cornflour tortillas are key.

I like green enchilada sauce made with green chilies and tomatillos.

I like my sauce to be somewhat spicy, but not so bad that the next morning shit is like passing liquid fire...
so give this a try if you want.
1 large Jalapeno 4 Medium red Chillies 1 Onion Fresh Cilantro to taste ( I like 1/4 cup chopped ) 3 vine ripened tomatoes ( medium sized ) 2 key limes ( the small limes ) sugar salt bacon fat
Melt the bacon fat in a 12" cast iron skillet. while it is heating dice the onions up fine. When the fat is just about smoking add the onions and reduce the heat to a med-low. Cook until the edges of the onion turn brown. Dice the Chillies and Jalapeno very fine as well. Keep the seeds and membrane of the peppers for extra heat if desired.
Add the peppers to the onions and continue to saute until peppers turn brown on the edges. When the peppers are ready add the cilantro, tomatoes, and lime juice. Add a dash of sugar and salt to taste. keep the heat on the pan until everything is good and cooked. About 10 minutes.
If you want a fine sauce, blend with a processor, but unless you are skilled with adding hot liquids to a blender wait until it cools down.

What makes an enchelada an enchelada? Is it just a burito baked with sauce and cheese? Or is their something inside that makes it an enchelada?
A place around here makes little egg roll chimichanga stye things.. White meat chicken, wrapped and deep fried, they give you 4 diping sauces and 5 rolls for $6. Good stuff..
Never made my own sauce but I like to add to the canned sauces to make them better...

The chimichanga is where its at. I like dark meat in them though. But really what does make an enchilada and enchilada?
