Outdoor bed question.

I went to my local nursery today and asked the guy working if manure or a fully organic blueberry, mussel, and salmon based compost with peat they were selling would have more nutrients beneficial to a fruiting garden, and he said second one is much better than the manure. Would this type of compost also work for growing shrooms in an outdoor bed, or does the mycelium not have the ability to use the nutrients in the mussel and salmon based compost?

Also, it is hard to find hay in my area at this time of year, would anyone recommend a good substitute?

Edit: I will be starting the beds with 1/2 pint brf B+ cakes, if that makes any difference.

read before you post. No it wouldnt work. You can grow mushrooms on dead salmon

Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.
