Sterilizion....

Ok, this is my first time...so don't laugh. I am sterilizing my jars in a regular pot on the stove...and when i went to check em out the water was boiling like mad...i mean little bubble were up kind of around the tops of the jars...not bubbling water...but bubbles...is this gonna ruin it?

are you saying the water was boiling so hard it splashed in your jars? or that water was coming out of them? (prolly the 1st one...)

water that boils too hard like that can sometimes splash into jars; although the holes for innoc. are taped, the lids are generally loose when sterilizing. water that boils INTO the jars isnt good, as it messes up the substrate ratio (makes it too wet).

you can usually tell after boiling if water has splashed into your jars; the substrate looks "wetter" like water was absorbed into it. (usually, the substrate looks almost exactly like it does when you 1st put them in to be sterilized- except it will have tiny drops of condensation on the inside of the glass jar).

so, if you think water got in, youll want to redo your jars. a too wet substrate can lead to slower or halted colonzation, and/or an invitation for contams.

edit: if you choose to redo them, only put about 1-2" of water in the bottom of the pot when the jars are loaded in. lift with a cloth, and check often that all the water hasnt boiled off- which can crack your jars and/or *bake* the substrate on the bottom of the jar- which is hard to colonize)

also, if you do have to add water to the pot mid-process, make sure it is hot-assed water otherwise you'll crack the jars!

i recomend pressure cooking them though, still some people just boil.
